Turkey Leftovers - Turkey, Brie and Cranberry Toastie
There are many things you can do with all that Christmas turkey, but this recipe will be one of the best!
Ingredients (Serves 1-2)
2 slices of good-quality bread (sourdough, ciabatta, or brioche work beautifully)
2–3 slices leftover turkey (roasted or smoked)
2–3 slices Brie cheese (or enough to cover the bread)
1–2 tbsp cranberry sauce
A small handful of baby spinach or rocket (optional, for freshness)
Butter or olive oil, for toasting
Salt & pepper, to taste
Method
Spread cranberry sauce on one or both slices of bread. Layer turkey slices evenly. Add the Brie on top of the turkey (it will melt beautifully). Add spinach or rocket if using. Season lightly with salt and pepper and top with the second slice of bread.
Butter the outside of both bread slices (or brush with olive oil). Heat a nonstick frying pan or sandwich press over medium heat for a couple of minutes. Cook the toastie for 2–4 minutes per side (or until golden and crisp), pressing gently with a spatula if using a pan. The Brie should be gooey and melted through.
Let it rest for 1 minute before slicing — this helps the cheese set slightly. Serve with extra cranberry sauce or a little side salad.
