Wyndhams joined Borough Market as one of the founding traders at the very first weekly market in 1999. Twenty-five years on, we're still here. Borough is still where the heart of the business lives.
Borough Market in 1999 was a working market. Wholesale was the main event, with chefs and restaurant owners coming through in the early hours to choose stock from the producers themselves. Lee opened the Wyndhams stall on his own a small stand, chickens reared on the family farm on the Norfolk-Suffolk border, driven down through the night to London Bridge.
The stall has grown and moved a few times within the market, from the original Stoney Street site, to a second hot-food unit on Bedale Street, and finally to where we are today: Stand 29, Bedale Street, selling raw poultry and game alongside our hot roast chicken wraps. The market has changed enormously since 1999. So have we. But the rhythm of a Saturday morning at Borough, the traders nodding to each other before opening, the smell of food being prepared, the queue starting to build by mid-morning. That hasn't changed at all.
POULTRY & GAME SPECIALISTS
Borough is where Wyndhams started, and poultry is still what we do best. You'll find a full range of free range chickens, specialist game birds in season, and ready-to-cook marinated poultry products for when you want a brilliant dinner without doing all the work yourself.
Game season runs from autumn into winter, partridge, grouse, venison, pheasant, mallard, woodcock. Borough is the best of our four shops for the rarer birds. Pop in to ask what's good this week, or what's coming into season next.
HOT ROAST CHICKEN WRAPS
Our Borough Market stall is the only Wyndhams location with a full hot food menu. And the hot roast chicken wrap is what most people come for.
It's our own free range chicken, roasted on-site through the morning. Pulled, piled into a tortilla, finished with crispy chicken skin, wild rocket, mayonnaise, freshly made salsa and a drizzle of sweet chilli. You can have it with a side of golden brown fries dusted with our signature chicken skin salt, the seasoning that's quietly become one of the most-praised things on our menu, full stop.
